I'm Julien Mathy-Maillot. Chalet Viñales is my childhood home, a place full of memories and emotions that I'm happy to bring to life through my hospitality and cuisine.
As a lover of beauty and goodness, I like to gather around large tables and offer sincere, vegetarian, seasonal cuisine, prepared with care using organic and local produce wherever possible.
Cooking for you is a militant act, but also a source of pleasure and sharing.
